Shortbread pecan crust. Elevated cream cheese filling. Stovetop chocolate pudding. Mascarpone whipped cream. Candied pecans and shaved chocolate.

Possum Pie is one of those old Arkansas desserts with a name strange enough to scare people off... but beneath that funny title is a layered pie of real charm, built from chocolate, sour cream, with a whipped cream finish. For decades, it has shown up in Arkansas cafés, potlucks, and church suppers, where it became a local favorite almost taken for granted. Outside the region, though, many people have never heard of it at all. Here, I have built my own recipe, from scratch. Possum Pie inspired by that classic Arkansas tradition... including a fully homemade version of every layer, from the crust to the fillings to the topping. This is not a copied vintage formula. It’s my own reconstruction of a regional dessert... built from memory, research, and a great deal of testing to capture the texture, balance, and spirit of the original.
