I wanted that thin, crackled, San Fransisco Bay Area deli-style shell with a soft roll underneath that can actually handle real sandwich fillings. Here is the full process for making them from scratch ... the dough, the topping, the proofing, and the bake that gives you that crisp, finely crackled top.
