A cinnamon roll that is fried like a donut, then coated with a chocolate fudge or berry frosting. One is from Maine, the other Ontario. Which to choose? BOTH!

Two towns. Two completely different pastries. Both called Persian Buns… a fried cinnamon roll with frosting on top. One vanished when the bakery closed its doors. The other is still made, and the recipe is kept as a trade secret. I set out to recreate both from scratch…and learned a few things the hard way.
