
Strawberry Lemonade Cake

A bright, tart-sweet layer cake that tastes like the drink in every bite. Renee was asked to make a birthday cake for a friend’s 50th, but the recipes she found either leaned too much into strawberry, too much into lemon, or treated the flavors as separate parts instead of one complete cake. In this video, Renee recreates the cake she developed for that neighborhood celebration and explains the problem with getting real strawberry lemonade flavor into a cake without ruining the crumb. Fresh strawberries, lemon juice, acid, moisture, and cake structure all have to be handled carefully, and this recipe was built from scratch to bring the flavor forward while still baking up as a proper layer cake. The same batter can also be used for cupcakes.
